Single Vineyard Rutherglen Durif traditionally fermented with extended maceration on skins to achieve equilibrium of flavour and structure release. The wine is unfined with a light filtration before bottling.

Black currents, ripe blood plums, dark chocolate and vanilla dominate the nose.
PALATE
Primary fruit characteristics are balanced by rounded tannins, plums, currants, cocoa and vanilla combine to provide a beautiful lingering finish.
FOOD MATCH
Eat it with beef, rare on the BBQ, sliced thinly in an Asian salad or long slow roasted in the slow cooker. Open the bottle and let it breathe and savour the intensity of flavour in each glass.

Traditionally fermented with extended maceration on skins to achieve a balance of flavour and structure. Aged for 24 months in American hogsheads, light fined and filtered prior to bottling.

The Calliope Chardonnay fruit is sourced from select premium cool climate vineyards in the King Valley. Harvested at night then gently pressed producing pristine fruit expression. Partial barrel fermentation in new French barriques, extended maturation with lees, stirring adds further complexity.

The Nook Sangiovese

Being a Chianti style wine, The Nook Sangiovese pairs well with any Italian foods, think tomato based like pizza with grilled vegetables or pasta with meat sauce, or even a mushroom risotto.
WINEMAKER COMMENTS
Sangiovese is a variety that has large clonal quality variation. Choosing the right clone, vine age and growing sites is critical to gaining full flavour rich cherry flavours typical of Chianti. Grown on vineyards in northeast Victoria this wine is a mix of two clones that were selected 25 years ago and are now in their prime. This wine displays the age, clonal selection and red soil site selection to give varietal characteristics.

Our warm climate and rich soils provide perfect growing conditions for Durif, synonymous with the Rutherglen Region. Our extended growing season resulted in an excellent flavour development in these grapes. The Nook Durif is a great introductory style of Durif, it’s perfect for that person who has never tried one!

This Pinot Noir has spent an extended time on skins and small batch parcels are fermented on stalks for complexity. 40% spends 6 months in new, French oak which produces an outstanding wine for all occasions.
The Nook Heathcote Shiraz

Aromas of spiced plums, dark cherries, cloves and cracked balck pepper and a hint of chocolate.

The palate shows dark fruits and chocolate and finishes with mouth coating tannins.

The Nook Shiraz is an excellent example of a Heathcote Shiraz. Intensely coloured and perfumed with blood plums and cracked black pepper. Wines in the Regional range are selected for the suitability of that region.

The Nook King Valley Chardonnay

The Nook Chardonnay is sourced from a single vineyard, close to Whitfield, in the King Valley. A portion of this wine is fermented in brand new French Hogsheads and aged for 6 months prior to blending. This helps to produce a wine of structure and balance.

Our Prosecco is sourced from a single vineyard in the King Valley that is on the bank of the King River. This unique micro-climate produces high quality prosecco fruit.

Full bodied flavours of ripe plum are followed by soft tannins. Nuances of milk chocolate show on the finish which is long and recalls a vanillin sweetness.

The Shiraz grapes were harvested and given a cold soak prior to 14 days fermentation. The wine was then pressed off and racked to a mixture of new and old American oak hogsheads. This vintage was warm to mild, resulting in a long ripening period.

Cold soaked on skins for 24 hours prior to pressing creates body and texture to offset the high natural acidity of these parcels of grapes. Very cold fermentation adds to the flavour profile.

Cool fermentation and early bottling produces this refreshing fruit wine that will liven up your summer. Harvested early to capture the fine aromas of the muscat grape.
Yeah Wine 'Mr Silky Pants' Light Red
Being further north and warmer means that the Syrah we get from Harvey always arrives at the start of harvest; in 2023 it arrived the day before we handpicked our Boyup Brook Viognier. After pressing off enough Viognier for two barrels of white wine, we threw the remaining grapes into a vat of Shiraz and co-fermented them together. Traditionally 3-5% Viognier is be added to Shiraz to add a pretty perfume and stabilise colour; we went super hardcore and added around 35%. The resulting wine is bright, fruit driven and fragrant; lighter bodied and super slurpable, but with a long, silky, serious finish. Feel free to chill and make sure you get your “silky pants” on! Bottled unfined and unfiltered, with maximum flavour.

Shiraz grown on the south facing slopes of the Tassell Park vineyard overlooking our winery. The bunches of handpicked grapes were kept whole, covered in carbon dioxide and sealed with plastic wrap. Left to their own devices for a couple of weeks a magical process called ‘carbonic maceration’ happens. Without access to oxygen, each individual grape berry ferments internally which brings plenty of bright fruity flavours, without extracting a lot of dryness or tannin. The resulting wine is medium bodied, vibrant, juicy and soft, with plenty of berry fruits and an attractive candied edge. Drink now and feel free to throw it in the fridge and chill. Bottled unfined and unfiltered, with maximum flavour.

These little bunches of inky goodness were grown at the Celestial Bay Vineyard in Wilyabrup. This tiny two-barrel batch was gently handled – hand plunged, and basket pressed – before being matured in French oak for sixteen months. Petit Verdot is a variety that packs in a lot of everything – tannin, acid, colour and most importantly flavour! Dark cherry, violets, thyme and graphite, accompany firm tannins and long savoury finish. Built for cold nights, open fireplaces and hearty food! Bottled unfined and unfiltered, with maximum flavour.

Handpicked grapes from the Three Hills vineyard in Karridale. Whole berry ferment, gentle hand-plunging, basket pressed and twelve months in French oak. In its Spanish homeland Graciano traditionally appears in blends, but when presented as a single varietal wine it offers plenty of bright forest fruits, aniseed and clove, along with rich tannins and a round lush finish. This is a unique, but delicious wine, vibrant and fruit forward, but with a savoury sophisticated edge. Bottled unfined and unfiltered, with maximum flavour.

In 2023 we were generously gifted about twenty buckets of handpicked Margaret River Sauvignon Blanc. Whenever we get a windfall we experiment and so we placed the bunches in a bin, filled it with CO2 and sealed it with plastic wrap. This process, called carbonic maceration, is used for red wine, but very rarely for whites. The resulting wine is packed with pungent Sauvignon Blanc flavours, but is also accompanied by plenty of spicey, savoury notes. Limited to twenty dozen, this is a super unique wine that is as delicious as it is interesting. Bottled unfined and unfiltered, with maximum flavour.

Pinot Noir from the Koomal Creek vineyard in Smithbrook, near Pemberton. Gravelly karri loam soils, cool climate and an immaculate, dry-grown vineyard all contribute to pristine quality grapes. 10% whole bunches added into the ferment which was gently hand-plunged for two weeks; basket pressed and then matured in French oak for twelve months. Berry fruits, hints of exotic spice and a long silky finish all scream class. Proper Pinot, hooray! Bottled unfined and unfiltered, with maximum flavour.

Chardonnay grown from a mate’s vineyard in the heart of Wilyabrup – this same fruit goes into a couple of well-known wines so we promised we’d keep it source secret. Gently pressed and the cloudy juice fermented in French oak using wild yeast. Matured in barrel for ten months with gentle lees stirring to build weight and texture and then bottled unfined and unfiltered. Bright and vibrant with a core of intense stone fruit, lemon curd and oatmeal. A new French barrel adds a subtle hint of vanilla and creamy weight. Chardonnay done properly; complex, long, intense and most importantly delicious. Bottled unfined and unfiltered, with maximum flavour.
MORE INFOYeah Wine The Skin Project Verdelho
This is our ‘orange’ or ‘skin contact’ wine. Made from Verdelho, the white grapes are basically treated as if they’re a red wine – left with their skins for two weeks and hand-plunged twice daily. The resulting wine picks up colour (the slight orange hue), tannin (that dryness on the finish) and interesting flavours (think oolong, ginger and camomile) from this process. Verdelho by nature has high acid (which keeps the wine crisp and fresh) and plenty of juicy, tropical fruit flavours (that make it delicious). This is interesting and textural, but it’s also super fruity and yum. Bottled unfined and unfiltered, with maximum flavour.

Have you ever tried a natively fermented wine? What does this even mean?
Natively fermented wine is when the yeast that is naturally found on the grapes in the vineyard are encouraged and utilised by the winemaker to ferment the juice into wine. This can often end up with dirty, unsavoury characters in the wine if done incorrectly, however, we have used all our experience and modern technology to cleanly and successfully ferment our 2022 Chardonnay this year using only the yeast found on the grapes.
Why did we do a native ferment? We did it because we wanted to push the boundaries a little and to bring more complexity and texture to our Chardonnay.

Willie Smiths Bulmers Norman Cider
Originally hailing from Normandy, France (hence the Norman) it gained popularity as a cider apple thanks to H.P. Bulmer & Co Ltd. who expanded it’s cultivation in Hereford in the early 20th century.
A remarkably bitter and astringent apple, which leads to a beautifully structured and complex cider. With the colour of senescent leaves, this is a most autumnal cider.
Full of tart red berries and bramble fruits with an abundance of dry crunchy tannins. A distinctive cider suited for Sunday brunches, lunches and roasts.
Willie Smiths Yarlington Mill Cider
Yarlington Mill was named so, as the seedling was discovered growing out of a water wheel near the village of Yarlington in the United Kingdom.
A handsome, well behaved tree in the orchard (most cider apple trees aren’t) which in turn makes handsome, well behaved ciders in the shed. Themes of baked and dried fruits, soft caramel notes and fine tannins with a hint of barnyard funk.

Willie Smiths Heritage Blend Cider
A *delicious blend of heritage cider apples – those with a long history of cultivation for cidermaking in the old world countries such as England, France, Spain and Germany.
Diverse in flavours and personality, they are often categorised as either sweets, sharps, bittersharps or bittersweets – according to the balance of sugar, acid and tannins.
Layers of complexities and textures create a well-balanced cider, rich in character and aromatics. It’s golden hue catches the eye with bright toffee apple on the nose. A creamy, layered cider evokative of apple pie and custard finishing with subtle tannin encroaching.
Willie Smiths Wild Cider (keg only)
With this little number, we press the apples and then sit back and let nature do her thing. The naturally occurring yeast on the apples kick off a unique ferment which means no batch of Wild is ever the same – which we love.
That being said, typically Wild display some funky barnyard characters with tartness and a gentle sour edge, finishing fresh.

Willie Smiths Traditional Cider
It is debatable what the apples are singing, but the amazing flavour of this cider is indisputable.
Complexity, textured mouth feel and lots of fresh apple flavour are delivered by using a blend of two thirds eating apples and one third heirloom French and English cider apple varieties.
This more traditional cider is perfect for when you’re looking for something different or broadening your cider-drinking horizons.

Our original cider, and the one we are famous for. We only use organic apples grown in the Huon Valley to create a balanced cider to suit any occasion.
To create this cloudy, sessionable and refreshing cider we use a mixture of everyday organic eating apples. Each brings their own dance to the party to provide acidity and texture. A small amount of apple juice gives lift & sweetness.

As the name suggests, this is our bold, dry and refreshingly crisp cider.
Although we use the same varieties of eating apples as our organic, all the sugar is fermented out allowing this cider to showcase each of the apples’ complex layers in their rawest form.
With an acidic bite that softens into a broad and creamy lingering finish, this one will leave you wanting more.
Goody Goody Tempranillo
Aromas of ripe cherries and cola with a touch of clove and aniseed. On the palate, you get juicy acidity; fine, dusty tannins; medium body; flavours of cherry cola, strawberry, plum and dark chocolate.
